Shiraz is picked and put into a large tank, which is then sealed to make it a traditional Carbonic Maceratedferment. We tap of the juice each day to keep the colour light and the palate fresh. Lots of natural acid here but a full avour of spice, dark fruits and heaps of energy and liveliness accross the palate. The Shiraz is grown organically by Fiona Wood and lots of work was done to increase soil fertility and vigor through mulching and shoot thinking. A delicious expression of shiraz, drink it on ice or our of the fridge or in a park. The wine gets better on day two and three where the fruit grown to even more deliciously intertwine with the spice and grip. - Travis Tausend
