As we tucked our 2022 Astral Project hand-picked Biodynamic Pinot Gris Sour to barrel, we were also busy making another light, bright wort. We rinsed the second-use skins and culture with this wort where it underwent an open fermentation followed by four months of conditioning in stainless. A textural delight having spent time on yeast lees, this farmhouse-style or ‘vineyard’ sour throws flavours of pear and tepache. PH sits at 3.5. - Loophole
