Chinotto and Native Grain Ale 9.5%

"Australis is the next step from our Dark Emu – a dark ale aged in oak and brewed with native grains. It’s been lifted with Chinotto syrup made by the Bertoncello Bros from @omyrestaurantandfarm using Mountain Yuzu fruit, farm honey, and native aromatics like strawberry gum, lemon myrtle, and river mint.

The result is a dark beer with layers of citrus, gentle bitterness, and an oaky backbone. Earthy, spiced, and quietly complex.

• Native grains: mamadyang ngalluk + burru ngalluk grass seeds harvested by Yuin people along the Wallagaraugh River.

• Chinotto syrup: cooked, steeped, and built for flavour over a month.

• Barrel aged: adds mellow tannins and depth.
