"Gingin clone Chardonnay across three blocks of the Moorialup vineyard with quite varying soil types and aspect. Hand picked, whole bunch pressed and 100% naturally fermented on full solids in French Oak Puncheons 50% new. Raised in the same barrels for 11 months with no additives, probably went through natural malolactic fermentation, then racked to tank to rest (on lees) for a further 6 months before being bottled with no fining, filtration or additives except a small amount of SO2.

Golden straw hue. Spicy sandalwood, hazelnut and bacon fat notes on the nose over a base of honeydew and rockmelon. The palate is slippery with fresh green apple, dried pineapple, vanilla bean, nutty, a touch of flint and that mineral/saline oyster shell character, finishing long and moreish."
